Sous Vide or Not Sous Vide, Part Two


Well, following the prior post on my food fanatic husband's penchant for cooking experimentation, here is our verdict on the sous vide cooking method for a whole turkey.

That cooked bird, whose sacrifice we greatly appreciate, turned out delicious. My clever husband chose well. What we cannot devour in a few days will be frozen for future consumption.
 
In the sealed cooking bag he opted to use chicken broth in place of the suggested water. I concurred, and later portioned the resulting stock in numerous freezer bags. In future, we likewise agree, some sodium free broth would be preferable as the resulting stove top corn bread stuffing came out extra salty.

(Don’t judge; I like the classic brand from my childhood… Heh…)

Also, I may note, the prepared stuffing mix is available in lower sodium. Anyway, twelve hours in a 150F degree water bath followed by a 450F degree oven roasting for thirty minutes resulted in an overall tender, fall apart juicy texture with a delectable outer crispness.

Yum.

I have since cleared the kitchen of entanglements and obstacles. The equipment, meanwhile, needs cleaned before storage and now our refrigerator is making strange noises.

Ugh…

  1. Oh my....so ready for the 2019 to be done with. I was pretty much done with it last Jan. Wow...sounds like the meal was great. I like turkey for a turkey salad after the holidays but if there is ham, I usually go with that and leave the turkey alone. A new this yr..., I will be going to my daughters house. I pretty much just wanted to chill and do nothing all day and not leave the house but my daughter will not allow that.

    1. Awww... It seems you should be allowed to just relax. ~hugs~ That's what we plan, tired of traveling across the state for holidays. Traffic is bad enough on Ohio freeways on the average day.

  2. Mmmm, that burd sure looks tantalizing! As usual, dad's gonna do a simple turkey roast, and mom's looking forward to his mouthwatering homemade stuffing, made from multigrain bread and dad's real chicken stock. Though he grew up loving everything drowning in gravy mom, ever concerned about his health, taught him to enjoy plain old turkey with just the stuffing and some fresh steamed green beans. She won't even let him have cranberry sauce, another staple from his youth.

  5. Great that his experiment turned out super!!!!

    Mmmm, I'm not ready for the Holiday Season, simply because I have not yet decorated. All I have to do for Thanksgiving is make an Apple Pie. The Family is *pitifully begging*, so I have to! LOL.

    No family exchange of presents on Christmas. We all just give to "Grands," so that's simple. Only one is not ready for money, which the older ones prefer. And my daughter-in-law pics out a gift for him. I always did that. Let her say, what she wanted us, to give kids, and to come into her home.

    Sooo, with the Horrrrror of Gift Selecting, removed... Which I made them all do, some years ago!!! It results in simpler Holidays. -smile-

  6. I like the holidays for all the good food but wish I had a little more time off so it wouldn't feel so rushed. Can't wait for turkey dinner. I thinks it's my fave :)

  7. The holidays are sometimes tough on me. I sometimes put up a tree, but I am alone, and so its better to try to forget the holidays otherwise I can get depressed. I'd never heard of this cooking method, but being an experimenter, now I want to give it a go.

  8. The Hubby is the chef around here, and he cooked his turkey the old-fashioned way...then ground it up and made portions for CAT FOOD! Everyone except Manny LURV the homemade turkey pate. If left to our own devices, we'd stay home with the kitties, so I can read books and The Hubby can watch football and putter in the kitchen.

  9. Interesting experiment. Glad it worked out. It's a longer method, but it sounds like the bird turned out much better.

    Now that I got my car smogged, I have all my mental entanglements gone so I can enjoy the holiday season. Hooray!
