My Syrup Returns the Favor

Ginger cookies.... Mmmm...

On the same day as my moldy maple syrup discovery I decided to bake molasses ginger cookies. After assembling, measuring, and mixing all dry ingredients, the butter soft and stand mixer ready to go, one missing item became glaringly obvious. We were out of molasses.

Of all things, I thought. And once again I wasted time and effort by jumping into action before gathering every ingredient.

In a strange twist of fate, real maple syrup makes a respectable molasses substitute. As an added bonus, my husband found and implemented another Internet tip on stopping a stand mixer from bouncing up and down during use. The racket is awful and that movement can damage attachments.

A simple screw adjustment does wonders.

  1. I do love my stand mixer. I got the ice cream maker attachment, and it's so easy to make homemade ice cream. (I haven't in ages, though.)

  3. When I baked a lot I would have enjoyed having a stand alone mixer. Now, I don't bake enough for that. Don't cream potatos either. I by Bob Evans in a pack...they are the BEST. Find them over at the end of the meat section. Plus, in my tiny kitchen I don't have room for much more. When these houses were built you had a stove and fridge. Now you add in a micro, coffee pot, air fryer, gridle, George Forman......nope, I don't need one.

  7. I want one so badly but I don't have the counter space for one. I would have it tomorrow if there was only a place to put it.
    I headed out a few months ago and go=t molasses for the same purpose. I was going to make (and haven't had time) ginger snaps. Oh I love those things.

    1. You are correct, though ours is stored beneath most of the time. :) I'm going to have to make cookies again and, this time, the crunchy type. These are soft, but still good.

  9. Dad wanted me to ask if you could please send some of those cookies to him. The maple syrup substitute thing is perfect! Way back in another life long before I ever came along dad was a "professional" baker and he had one of those handy KitchenAid mixers. He's also worked in several commercial kitchens where the mixers were floor models the size of a dump truck!
